If you like garlic, you'll love this one. It's great as a side dish or on its own.
Ingredients:
3-4 cups uncooked rotini pasta
1 small zucchini or yellow summer squash, thinly sliced
3-4 cups small broccoli florets
2/3 c. diced black olives
1 c. diced tomato
1/2 c. chopped onion
1/2 c. chopped green pepper
1/2 - 3/4 c. grated Parmesan cheese
Cook rotini, rinse, drain and cool. Mix in large bowl with remaining salad ingredients.
Dressing:
1/2 c. red wine vinegar
1 c. olive oil
1-2 cloves fresh garlic, very finely chopped
1 1/2 tsp. dry mustard
1 1/2 - 2 tsp salt
In a separate bowl, combine all ingredients for dressing. Whisk until smooth. Pour over salad; toss gently to combine. Cover and chill before serving.
