Cooking on the road can be a challenge, but with the right recipes, it’s easy to whip up delicious meals the whole family will love. Even with the limited space in your RV, you don’t have to “limit” yourself to boring meals. It’s easy to create several tasty and filling meals while enjoying your time at the campsite.
I am going to share with you 5 of our go-to recipes for our campsite adventures.
Breakfast Burritos
Ingredients: Eggs, sausage, frozen veggie mix, shredded cheese, tortillas, salsa(toppings of your choice: jalepeno,sour cream, ect.)
Instructions: Brown meat and frozen veggies in a skillet. While meat and veggies are cooking, scramble eggs in a bowl and set aside. Once the meat is cooked throughly add the scramled egg mix. After the eggs are cooked, cover with cheese. When the cheese has melted serve on a tortilla with salsa and any additonal toppings you like.
Quesdillas
Ingredients: Meat of choice(we usually use canned chicken, taco seasoning, salsa, shredded cheese,tortillas and toppings of choice.
Instructions: Mix meat, taco seasoning and salsa in a bowl(I do this to taste. Maybe 2 or 3Tbsp of taco seasoning and a ¼ c of salsa) Warm in microwave. Spread some of the meat mixture on half a tortilla(this is subjective to how much meat your want in your Quesdilla). Cover meat with cheese. Fold over tortilla and grill in a skillet on each side until toasted. For Summer’s cheese quesdilla, I just used cheese and tortillas.
Pulled Pork Burgers
Ingredients: Frozen or fresh premade burgers, Premade pulled pork(you can do this at home or buy a premade package), Hamburger buns of choice, chips, Cheese slices(we love sharp chedder), BBQ sauce if desired
Instructions: Grill Burgers as desired(we grilled ours outside on a portable grill). Melt cheese over burgers. While the cheese is melting, heat the pulled pork in a skillet with a little water. You can toast the buns if desired on the grill top. Place the the cheese burger on the bun and cover with the pulled pork. Top with bbq sauce. Serve with chips.
Tacos/Taco Salad
Ingredients: Ground Beef, Refried Beans, 1 minute microwave Spanish rice, Shredded Lettuce, Tortillas or taco shells(your choice, Summer prefers soft tacos), Taco Seasoning, Toppings of your choice(salsa, shredded cheese, jalepenos, sour cream, ect.)
Instructions: In a skillet cook ground beef. Add taco seasoning and water. Heat refried beans in microwave. Cook the minute Spanish rice in microwave. Add as much lettuce to your taco bowl as you like. Top with beans meat,rice and any toppings your prefer. Now, for Summer’s taco, we put some beans, cheese and meat. That’s all she wanted. She ate some lettuce on the side with some rice.
Chili
Ingredients: Ground beef or turkey, chili beans, canned tomatoes, onion, chili seasoning, garlic powder, toppings of choice(crackers, shredded cheese, jalepenos, ect.)
Instructions: In a pot dump chili beans and tomatoes. Season with chili powder and garlic powder to taste. Heat. Dice an onion. I use about half of a medium onion, but you can use more of less based on your preference. In a skillet cook the ground beef(or turkey) and onion. As it is cooking, you can season it as desired, I just put some chili powder and garlic powder on it. Once the meat is cooked, add it to the pot. You can eat it as soon as its heated or let it simmer until you are ready to eat. Top with your favorites, like crackers, cheese and jalepenos.
Now as you read through these recipes, you might be thinking “these are so basic and simple” and they are. That’s why they have become such a staple for us when we travel in our RV. After a long day on the road or a long day of adventures, We don’t want to come back to the camper to be ‘burden” with trying to create some elaborate meal. We love the simplicity of these meals. These are aslo great because you could premake a good portion of them, making the cooking time ever shorter. I know these recipes will be a hit at you campsite too.
